BIOCHEMICAL COMPOSITION, VITAMIN, MACRO-AND MICRO-ELEMENTS CONTENT IN DIFFERENT VARIETIES OF DENTIL
This study aims to determine the biochemical composition (carbohydrates, proteins, lipids), vitamin C content, and macro- (Ca, K, Mg) and microelements (Fe, Zn, Mn) in dill (Anethum graveolens L.) varieties “Gribovskiy”, “Lesnogorodskiy”, and “Alligator”. Samples were collected in Tashkent region and analyzed using HPLC and AAS methods. Results revealed significant differences among varieties: “Lesnogorodskiy” showed the highest vitamin C content (92.7 mg/100 g), while “Alligator” excelled in calcium and iron levels. Statistical analysis (ANOVA, p < 0.05) confirmed the reliability of the differences. The study provides valuable insights into the nutritional value of dill.
