Аннотация

В этой статье были изучены два разных ноты температуры 15, 25 и 35 ° C (Allium Cepa L.) - испанский 313 и 90 -дневный период хранения хранения Сумбалы. In this article, two different ontains of the temperature of 15,

25 and 35 ° C (Allium CEPA L.)

- Spanish 313 and the Sumbala's

90-day storage storage period was studied. Both varieties were
observed that the heads of onion heads at high temperatures
compared to low temperatures. Speedsky 313 and brass

varieties were 40.3% and 22.3%, respectively, and in 35 ° C. In

both varieties, both the growth rate reached the maximum at

25°C

and then decreased. With the increase in storage

temperature and duration, the weight loss of onions was also
found to increase.

past haroratga nisbatan yuqori haroratda piyoz boshlarining
unib chiqishi susaygani kuzatildi. Ispanskiy 313 va Sumbula

navlarida unib chiqish darajasi 15°C da mos ravishda 40,3% va
22,3% bo‘lgan bo‘lsa, 35°C da bu ko‘rsatkich mos ravishda

3,4% va 1% gacha kamaydi. Har ikkala navda ham nihol
(yap

roq) o‘sish tezligi 25°C da maksimal darajaga yetgan,

so‘ng esa pasaygan. Saqlash harorati va davomiyligi ortishi
bilan piyozning vazn yo‘qotishi ham oshgan

ligi aniqlangan.

KIRISH VA TADQIQOTNING ASOSLANISHI

Piyoz (Allium cepa L.)

O‘zbekiston iqlim sharoitida keng yetishtiriladigan va aholining

kundalik iste’molida muhim o‘rin egallagan sabzavot ekinlaridan biridir. Uning

oziqaviy

qiymati yuqori bo‘lib, turli biologik faol moddalar, ayniqsa, antioksidantlar, fitontsidlar va C

vitamini bilan boy hisoblanadi. Ayni paytda, yil davomida piyozni uzluksiz yetkazib berish va

bozordagi barqaror narxni ta’minlashda mahsulotning saql

ash muddatini uzaytirish katta

ahamiyatga ega.

Piyozni saqlash davrida yuzaga keladigan asosiy muammolardan biri

bu boshlarning

erta unib ketishi va og‘irlik (vazn) yo‘qotishidir. Ayniqsa, harorat va namlik kabi omillar
ushbu jarayonlarga bevosita ta’sir

ko‘rsatadi. Yuqori haroratda unib chiqish darajasi pasayishi

mumkin bo‘lsa

da, bu holat boshqa nojo‘ya ta’sirlarni, jumladan, chirish va intensiv vazn

yo‘qotish holatlarini kuchaytirishi mumkin. Shu sababli, saqlash sharoitlarini ilmiy asosda
o‘rganish, xususan, haroratning piyozning saqlanuvchanligiga ta’sirini baholash dolzarb

masalalardan biridir.

asoslangan xulosalar ishlab chiqiladi.

ishlatilgan piyoz navlarining asosiy xususiyatlari 1-jadvalda

keltirilgan. Piyoz boshchalari yangi yig‘ib olingan bo‘lib, dalada ikki hafta davomida quritilgan
holda mahalliy bozordan xarid qilindi. Saqlashdan oldin bir xil o‘lchamdagi sog‘lom

boshchalar tanlab olindi, ustki qismi (yer ustki poyasi) olib tashlandi hamda zararlangan va
kasallangan boshchalar ajratib tashlandi. Tadqiqot uchun

Ushbu tadqiqot natijalari shuni ko‘rsatdiki, yuqori haroratda saqlanganda piyoz

boshlarining

unib chiqishi sezilarli darajada kamaygan. Eng yuqori harorat (35°C)

nihollanishni kuchli tarzda to‘xtatgan va piyozlar bu haroratda doimiy saqlanganda uyqu
holatida qolgan. Yuqori haroratda saqlashning unib chiqishini to‘xtatishi piyoz navlari uchun

umumiy hodisa hisoblanadi.

Piyoz boshlarining unib chiqishi eng tez 10 dan 20°C gacha bo‘lgan haroratlarda sodir

bo‘lishini, pastroq haroratda esa sekinlashishini yoki 20–30°C oralig‘ida harorat oshgan sayin

sekinlashishini qayd etildi.

30°C haroratda saqlash ko‘plab piyoz navlarida unib chiqish sekinlashtirishini

ko‘rsatgan.

Yuqori harorat piyoz boshlarida faoliyatning susayishi yoki issiqlik sababli uyqu holatini

(termodormantlik) keltirib chiqarishi mumkin. Miedema va Kamminga (1994) piyoz

nisbatan past bo‘lishini bildirgan. Demak, yuqori haroratda piyoz metabolik faolligi pasayadi.

Tanaka va boshqalar (1985) nafas olish tezligi (respiratsiya) orqali unib chiqish va

h

arorat o‘rtasidagi bog‘liqlikni o‘rgangan. Ular yuqori haroratda saqlash boshida nafas olish

tezligi tez pasayishini, 15°C ga nisbatan ancha sustlashishini aniqlagan. Ularning xulosasiga
ko‘ra, bu pasayish uyqu holatining boshlanishi bilan bog‘liq.

Ushbu t

adqiqotda yana shuni aniqladikki, piyozning vazn yo‘qotilishi harorat ortishi

bilan oshgan. Bu natijalar Ramin (1999) ning topilmalari bilan hamohangdir. U o‘z tadqiqotida
‘Texas Early Grano’ va ‘Dorcheh’ navlari 2°C haroratda 65

-75% nisbiy namlikda 270 kun

davomida atigi 10% og‘irlik yo‘qotganini yoki kuniga 0.035% bo‘lganini bildirgan. Biroq 25°C
haroratda bu yo‘qotish kuniga 0.16% va 0.116%, 30°C da esa 0.285% va 0.196% bo‘lgan.

Yuqori haroratda og‘irlik yo‘qotilishini kamaytirish uchun nisbiy namlikni o

shirish

mumkin, ammo Ramin (1999) ta’kidlaganidek, 65–

75% nisbiy namlik har qanday haroratda

piyozni saqlash uchun eng mos hisoblanadi.

Xulosa qilib aytganda, hozirgi natijalar yuqori harorat saqlash davrida piyozning chirish

jarayonini tezlashtirishini ko

‘rsatdi. Bu esa Ramin (1999) tomonidan ham qayd etilgan bo‘lib,

chirigan piyozlar soni saqlash muddati, nav va harorat oshgan sari ortadi, degan fikrni
tasdiqlaydi.
