SIGNIFICANT ASPECTS OF INDUSTRIAL PROCESSING OF MEAT AND MEAT
PRODUCTS

Abstract:
The article presents current issues of reproduction of meat and meat products, which
occupy an important place in the industry, and their delivery to the population, as well as the
President's strategy for ensuring food security, which must be implemented by 2030, as an
important procces.

Аннотация:
В статье представлены актуальные вопросы воспроизводства мяса и
мясопродуктов, занимающих важное место в отрасли, и их доставки населению, а также
стратегия Президента по обеспечению продовольственной безопасности, которую
необходимо реализовать до 2030 года, как важную задачу.
Ключевые слова:
Мясо, мясопродукты, процесс переработки, стратегия, подкомплекс,
структура мяса, мясная сеть, современное производство.

Annotatsiya:
Maqolada sanoatda muhim o’rin egallagan go’sht va go’sht mahsulotlarini qayta
ishlab chiqarib va aholi iste’moliga yetkazish borasidagi dolzarb masalalar hamda
Prezidentimizning 2030-yilgacha amalga oshirilish zarur bo’lgan oziq-ovqat xavfsizligini
ta’minlash borasidagi strategiyalari muhim vazifa qilib keltirilgan.

Introduction.
Modern trends in world development directly determine the nature of the transformation and
further development of the national economy. These processes have their own qualitative and
quantitative parameters (increasing the level of globalization, competition, increasing the share),

large (monopolistic) business structures, the presence of a high level of risk and uncertainty) and
directly affect the socio-economic development of the country. The conceptual aspect of any
form of socio-economic management includes such important and urgent issues as ensuring high
competitive advantages, maintaining and strengthening security (food, economic, national),
achieving a high level of socio-political stability, improving the quality of life and well-being.
An effectively organized and systematically monitored food market is considered the most
important factor in achieving the set goals. In turn, it is known that the dynamics of its
functioning and development trends are closely related to the performance indicators of
individual sub-sectors of the agro-industrial complex and are a link in the food industry as a
whole.
The development of the above-mentioned sectors of the national economy is precisely the
subcomplex of domestic meat products. In the modern conditions of economic management, the
industrial sector plays an important role in the process of its formation and consolidation. Given
that we all understand that the country's food security is a priority task, meat and meat products
are a category of socially significant products, and the level of their consumption directly
determines the overall indicator of the quality of life of the population.
The food processing industry is a complex and systematic process that includes several stages.
Therefore, the process of processing meat and meat products is also a somewhat consistent and
relevant process.
Literature review
A. Kotarov in his scientific work “Modern methods of developing the meat product complex and
integrated approaches to agricultural management” created a modern subcomplex of meat
products processing.
Sh. Amirov, Sh. Kurbanova in their article “The state of livestock production in Uzbekistan”
analyzed the production of products using foreign experience.
A. Török, Ch. Yeh, D. Menozzi, P. Balogh, in their articles “Consumer preferences for meat
processing” noted that processed meat products are a major part of the typical European diet, and
noted the mistakes made by workers in the process of packaging, safety, and processing.
S. Andrew et al. The article “Meat and meat product production strategies” presents meat
product production technologies and methods of their use.
Analysis and results.
The following are examples of current changes in our country and current decrees aimed at
ensuring the safety of the meat and meat product processing structure and improving the quality
of products. The modernization of the livestock production network, the attraction and increase
of private investment and foreign capital flows for large-scale diversification of the industry and
its state support, as well as the introduction of mechanisms to increase investment attractiveness,
are set as a priority task for our country.

When calculating the share of agricultural products, the highest share of livestock
products was meat products, which amounted to 30.3 percent. This means that in total it is equal
to one third of all agricultural products. Dairy products accounted for 14.9 percent. Eggs showed
an indicator above 2 percent, while other livestock products accounted for 2.5 percent. It is
known that the highest share of agricultural products, 49.8 percent, belonged to livestock
products. In accordance with the Decree of the President of the Republic of Uzbekistan No. PF-
36 dated February 16, 2024 "On additional measures to ensure food safety in the republic", the
following goals were set to increase the consumption of meat and meat products in the industry
and increase the percentage of processing.

The most important of the above goals is that the growth of the population in the
country will lead to an increase in consumer goods, and this significant change will certainly
affect processed meat products. In the target indicators of the Strategy for Ensuring Healthy
Eating, Full Satisfaction of Population Consumption and Food Security in the Republic of
Uzbekistan until 2030, we can see a forecast for the growth of meat storage and processing
volumes.

The data in the table above show that the percentage of meat processing that will be
implemented by 2030 will increase to 16.6 percent, while the base year growth rate of 15.6 this
year is 15.3 percent, which means that the 5-year analysis shows that consistent work in the field
will allow us to create a modern subcomplex that will radically innovate the meat system in the
industry.
Conclusion.
Meat and meat product processing is an activity aimed at satisfying the consumption of
the population in this country. The forces mobilized to fulfill this subcomplex without flaws are
numerous. If the composition of the processed meat in the country and the technologies used for
its production were to operate on a par with developed countries,

• high-pressure processing (HPP): serves to increase food safety
• advanced packaging solutions: important tasks such as extending shelf life and reducing waste
• robotics and automation: serves to increase efficiency and safety
• artificial intelligence (AI) and machine learning: optimize production and reduce costs
• focus on the green economy: reduce waste
We are confident that the optimization and modernization of the processing process, such as The
most commonly used categories for the development of the industry are "meat products
subcomplex", "meat food sector", "meat subcomplex", "meat processing complex", "meat
industry", "meat sector", "meat processing industry", "meat processing sector", etc. We believe
that new terms introduced into the industry will modernize this industry.
