The effect of various reagents on the quality parameters of cottonseed oil was investigated and the optimal reagents were selected. In the alkaline refining of cottonseed oil, the use of an aqueous solution of sodium silicate instead of a portion of the traditional caustic soda has been found to improve the quality of the oil. The technology of step-by-step refining of cottonseed oil with aqueous solutions of traditional caustic soda and sodium silicate has been developed.
Coconut oil should be used in chocolate and chocolate products. However, due to the high cost of coconut oil, its substitutes have been developed. The article contains information about cocoa used in chocolate products and oils used instead. Also, the results obtained as a result of the analysis of the physical-chemical parameters of confectionery oils and coconut oil substitutes used in chocolate products are presented. As a result of the research, it was found that the amount of trans fatty acids in the analyzed oils is higher than the standard norms.
Today, extraction gasoline is used in the production of vegetable oils. For several years, this solvent was not enriched with any additives to improve the efficiency of vegetable oil production, or another type of solvent was not used instead. For this reason, in our research work, instead of extraction gasoline, we proposed its analogue. Based on the results obtained, it was determined that the proposed analogue allows to speed up the process and improve the quality of the extracted oil compared to traditional extraction gasolines.
The emulsifier is the main raw material for the production of emulsion products, including margarine. To date, soy lecithin E322 is imported to our republic from abroad and is widely used in the margarine industry. The aim of the study is to use soy lecithin extracted from local soybean oil in the production of margarine products and compare it with E322. As a result, the efficiency of lecithin extracted from local soybean oil for margarines with a high solid fat content was higher than E322.
Tea is a unique concentrate of the most valuable taste, dietary and medicinal substances. Not a single drink has such a rich complex of biologically valuable, healing qualities. The therapeutic and prophylactic effect of tea makes it one of the important means of modern medicine. Along with alkaloids (caffeine, theobromine and theophylline), which give the drink a stimulating effect, tea leaves contain biologically valuable substances: tannin, various vitamins, trace elements, essential oils, soluble nitrogenous compounds and all essential amino acids. It contains many different phenolic compounds that give the drink unique healing properties and the current level of knowledge about the composition of tea helps to find objective criteria for determining its quality and move from the categories of subjective organoleptic and aesthetic assessments to a short and dispassionate language of numbers.

Несмотря на то, что накоплено много экспериментальных данных о функциях некоторых распространённых белков, экспрессированных в основных типах эпителиальных клеток слизистой оболочки желудка, другие белки все ещё не идентифицированы. Среди мало изученных ферментов особый интерес представляют липолитические ферменты, класс ферментов, который превращает липидные молекулы. Липазы, способные расщеплять растительные масла и животные жиры в организме, используются в производстве биотоплива. Фосфолипазы, участвующие в передаче сигнала внутри клетки, также применяются в синтезе производных фосфолипидов для пищевой промышленности и медицины. К настоящему времени ферменты, участвующие в метаболизме сфингомиелина, остаются подробно не изученными.
In this article plant lectins and their spesifications as biologically active substances of nonimmune origin, possessing a common property of specifically binding to the surface of bacterial cells and viral protein are examined. The main attention is paid to the possibility of using plant lectins in medicine and biomedical practice.

Today, in our Republic, most of the baking oils are margarines prepared on the basis of food salami. These margarines do not meet the standards of trans acid content (more than 2%). The research paper presents the results of hydrogenation of cotton palmitin in the presence of a regenerated catalyst, the melting temperature of which is less than 59 °C and the iodine number of no more than 6, and the preparation of a recipe for margarine with reduced trans acid content, which is used in baking based on it.
Совершенствование комплекса лечебных мероприятий у пациентов с эрозивно-язвенной формой красного плоского лишая слизистой оболочки полости рта с использованием медицинского озонированного кунжутного масла на базе фонового лечения.
Нами проведено исследование по разработке способа получения композиции ПАВ для устранения дентритообразования при электролизном процессе получения катодной меди. отличающийся тем, что с целью обеспечения гидрофобности и стабильности, нагретые до70-75◦С дистиллированные жирные кислоты хлопковых соапстоков подвергают взаимодействию с кубовыми остатками моноэтаноламина при 100-110◦С в течении 30 минут в присутствии стабилизатора натриевой соли пальмитиновой кислоты, с последующим введением добавок: индустриального масла, парафина, церезина, взятых при определнном соотношении компонентов.

Since glycerin is obtained from vegetable oils and fats, its quality directly depends on the quality of oil and fat. Also, the methods and technologies of obtaining and processing glycerine affect
the quality of glycerine. Based on the results of IK analysis, it was shown that the use of a mixture of
adsorbents to improve the quality of distilled glycerin is effective in the research work. If we look at the IR analysis results of purified glycerol, the IR spectrum of glycerol showed O-H stretching at 3338.15 cm -1 , and C-H stretching was detected in the peaks in the region of 2800-2950 cm -1 . The C=O stretching band present in unbleached glycerol at 1736.58 cm -1 is not present in the spectra of eluted glycerol. It was observed that the peaks observed in the spectra above 3600 cm -1 also disappeared. This means that the phenolic group of substances in refined glycerin has been purified.
